Ingredients:

01 - All-purpose flour: 4 cups, for dough structure.
02 - Granulated sugar: 1/4 cup, for sweetness in dough.
03 - Active dry yeast: 1 packet (2 1/4 tsp), for leavening.
04 - Salt: 1 tsp, to balance flavors.
05 - Ground cinnamon: 1/2 tsp, for dough flavor.
06 - Milk: 1 cup, warmed for dough.
07 - Unsalted butter: 1/4 cup, melted for dough.
08 - Eggs: 2 large, for binding.
09 - Apples: 2 cups, peeled and diced for filling (Granny Smith or preferred variety).
10 - Brown sugar: 1/4 cup, for apple filling sweetness.
11 - Ground cinnamon: 1 tsp, for apple filling spice.
12 - Lemon juice: 1 tbsp, to prevent browning and add flavor.
13 - Cornstarch: 1 tbsp, to thicken filling.
14 - Powdered sugar: 1 cup, for icing.
15 - Milk: 2 tbsp, for icing consistency.

Instructions:

01 - In a large bowl, combine 2 cups of flour, granulated sugar, yeast, salt, and ground cinnamon.
02 - In a separate bowl, mix warmed milk, melted butter, and eggs.
03 - Pour the wet ingredients into the dry ingredients, mixing until combined. Gradually add the remaining flour until a soft dough forms.
04 - Turn the dough onto a floured surface and knead for 5-7 minutes until smooth and elastic.
05 - Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for 1 hour, or until doubled in size.
06 - In a bowl, combine diced apples, brown sugar, ground cinnamon, lemon juice, and cornstarch. Mix well and set aside.
07 - Once the dough has risen, punch it down and roll it into a rectangle (about 1/4 inch thick). Spread the apple filling evenly over the dough.
08 - Starting from one long edge, roll the dough tightly into a log. Pinch the seam to seal.
09 - Cut the log into 12 equal pieces and place them in a greased 9x13-inch baking dish.
10 - Cover the rolls with a towel and let them rise for another 30-45 minutes until puffy.
11 - Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes until golden brown.
12 - In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth to make the icing.
13 - Drizzle the icing over warm rolls and serve each roll with a scoop of vanilla ice cream on top.
