Apple Crumble Cake (Print Version)
Ingredients:

For the Cake: 2 eggs.

½ cup yogurt (125g).

½ cup oil (108g).

¾ cup white sugar (150g).

¼ cup brown sugar (50g).

1 tsp vanilla extract.

1 ¾ cups all-purpose flour (220g).

2 tsp baking powder.

½ tsp baking soda.

1 tbsp ground cinnamon.

½ tsp ground ginger.

¼ tsp freshly grated nutmeg.

1 ½ cups diced apples.

For the Crumble Topping: ⅔ cup brown sugar (135g).

1 cup all-purpose flour (125g).

1 tsp ground cinnamon.

8 tbsp unsalted butter (125g), cold and cut into cubes.
Instructions:

Preheat oven to 350°F (175°C). Grease a 9-inch round baking pan.

In a bowl, mix together yogurt, oil, white and brown sugars, eggs, and vanilla until smooth.

In a separate bowl, combine flour, baking powder, baking soda, cinnamon, ginger, and nutmeg.

Gradually mix the dry ingredients into the wet mixture. Fold in the diced apples.

In another bowl, mix together brown sugar, flour, and cinnamon.

Add cold butter and mix with a fork or hands until it forms a crumbly texture.

Pour the cake batter into the prepared baking pan.

Sprinkle the crumble evenly over the top.

Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.

Let the cake cool for 10 minutes in the pan before transferring to a wire rack.
