Apple Crumble Cake (Print Version)

Ingredients:

01 - For the Cake: 2 eggs.
02 - ½ cup yogurt (125g).
03 - ½ cup oil (108g).
04 - ¾ cup white sugar (150g).
05 - ¼ cup brown sugar (50g).
06 - 1 tsp vanilla extract.
07 - 1 ¾ cups all-purpose flour (220g).
08 - 2 tsp baking powder.
09 - ½ tsp baking soda.
10 - 1 tbsp ground cinnamon.
11 - ½ tsp ground ginger.
12 - ¼ tsp freshly grated nutmeg.
13 - 1 ½ cups diced apples.
14 - For the Crumble Topping: ⅔ cup brown sugar (135g).
15 - 1 cup all-purpose flour (125g).
16 - 1 tsp ground cinnamon.
17 - 8 tbsp unsalted butter (125g), cold and cut into cubes.

Instructions:

01 - Preheat oven to 350°F (175°C). Grease a 9-inch round baking pan.
02 - In a bowl, mix together yogurt, oil, white and brown sugars, eggs, and vanilla until smooth.
03 - In a separate bowl, combine flour, baking powder, baking soda, cinnamon, ginger, and nutmeg.
04 - Gradually mix the dry ingredients into the wet mixture. Fold in the diced apples.
05 - In another bowl, mix together brown sugar, flour, and cinnamon.
06 - Add cold butter and mix with a fork or hands until it forms a crumbly texture.
07 - Pour the cake batter into the prepared baking pan.
08 - Sprinkle the crumble evenly over the top.
09 - Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
10 - Let the cake cool for 10 minutes in the pan before transferring to a wire rack.
11 - Slice and enjoy with a warm cup of tea or coffee!.
