Rainbow Cookies (Print Version)

Ingredients:

01 - 3 cups + 3 tablespoons all-purpose flour.
02 - 2 teaspoons baking soda.
03 - 1 teaspoon salt.
04 - 1 cup unsalted butter, cold.
05 - 1 cup light brown sugar, packed.
06 - ¾ cup granulated sugar.
07 - 2 large eggs + 1 egg yolk.
08 - 2 teaspoons vanilla extract.
09 - 3 cups white or semisweet chocolate chips.
10 - 3-8 colors of food coloring or gel.

Instructions:

01 - Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or lightly spray with non-stick spray.
02 - In a medium bowl, whisk together flour, baking soda, and salt.
03 - In a large bowl, combine cold butter, light brown sugar, and granulated sugar, blending until smooth and creamy.
04 - Slowly add the eggs, egg yolk, and vanilla to the butter mixture. Mix until well combined.
05 - Gradually add the dry ingredients to the wet mixture, stirring until just combined.
06 - Divide the dough into 3-8 parts, depending on how many colors you want, and mix food coloring into each portion.
07 - Roll each colored portion into a rope about 14-15 inches long. Align the ropes beside each other on parchment paper, press them together, and twist them lightly into a log shape.
08 - Cut the log into ½-inch thick pieces, roll each piece into a ball, and place them on the prepared baking sheets.
09 - Bake the cookies for 9-13 minutes, until the edges are set. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes:

01 - Tip: Adjust baking time based on cookie size. Larger cookies may require additional baking time.
