Layered Cookie Bars (Print Version)
Ingredients:

1 package (14.3 oz) Golden Oreos, crushed into fine crumbs.

½ cup unsalted butter, melted.

½ cup unsalted butter, softened.

½ cup granulated sugar.

½ cup brown sugar, packed.

1 large egg.

1 tsp vanilla extract.

1 ¼ cups all-purpose flour.

½ tsp baking soda.

¼ tsp salt.

1 cup semi-sweet chocolate chips.

8 oz cream cheese, softened.

¼ cup granulated sugar.

1 tsp vanilla extract.

1 large egg.

½ cup caramel sauce (store-bought or homemade).

½ cup chopped pecans.

½ cup toffee bits.

Instructions:

Preheat oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.

In a medium bowl, mix crushed Golden Oreos with melted butter. Press into the bottom of the prepared pan.

For the cookie dough layer: Cream together softened butter, granulated sugar, and brown sugar. Beat in the egg and vanilla extract. In another bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to the wet ingredients. Fold in chocolate chips and spread over the Oreo crust.

For the cheesecake layer: Beat softened cream cheese until smooth. Add granulated sugar and vanilla extract, then beat in the egg. Spread over the cookie dough layer.

Drizzle caramel sauce over the cheesecake layer. Sprinkle chopped pecans, toffee bits, and mini chocolate chips evenly over the caramel.

Bake for 25-30 minutes or until the edges are golden brown and the center is set. Allow to cool completely in the pan.

Lift the bars out of the pan using the parchment paper overhang. Cut into squares or bars and serve.
