Blueberry Lemon Cookie Bars (Print Version)

Ingredients:

01 - ½ cup unsalted butter, softened.
02 - ¾ cup granulated sugar.
03 - 1 large egg.
04 - 1 teaspoon vanilla extract.
05 - Zest of 1 lemon.
06 - 1 tablespoon fresh lemon juice.
07 - 1½ cups all-purpose flour.
08 - ½ teaspoon baking powder.
09 - ¼ teaspoon salt.
10 - 1 cup fresh blueberries.
11 - ½ cup white chocolate chips.
12 - 2 tablespoons heavy cream.
13 - Fresh blueberries (for garnish).
14 - Lemon zest (for garnish).

Instructions:

01 - Preheat your oven to 350°F (175°C). In a bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg, vanilla extract, lemon zest, and lemon juice.
02 - In a separate bowl, sift together the flour, baking powder, and salt. Gradually mix the dry ingredients into the wet mixture. Gently fold in the fresh blueberries.
03 - Spread the batter evenly into a prepared baking pan. Bake for 12-15 minutes, or until the edges are just golden and the center is set. Let the bars cool on a wire rack.
04 - In a microwave-safe bowl, heat the white chocolate chips and heavy cream in short bursts, stirring until smooth. Drizzle the melted white chocolate over the cooled cookie bars.
05 - Garnish with fresh blueberries and a sprinkle of lemon zest. Cut into squares and enjoy!.
