Blueberry Lemon Cookies (Print Version)

Ingredients:

01 - Unsalted butter: 1 cup, softened.
02 - Granulated sugar: 1 cup.
03 - Large egg: 1.
04 - Vanilla extract: 2 tsp.
05 - All-purpose flour: 2 ½ cups.
06 - Baking powder: 1 tsp.
07 - Salt: ½ tsp.
08 - Blueberry jam: 1 cup.
09 - Powdered sugar: 1 cup (for lemon frosting).
10 - Lemon juice: 2 tbsp.
11 - Blue sugar crystals: For garnish.

Instructions:

01 - Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
02 - In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
03 - Beat in the egg and vanilla extract until well combined.
04 - In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
05 - Scoop small portions of dough and flatten them into discs. Place a teaspoon of blueberry jam in the center of each disc and fold the dough over, sealing the edges.
06 - Place the filled cookies on the prepared baking sheet and bake for 12-15 minutes, or until the edges are lightly golden. Cool completely on a wire rack.
07 - In a small bowl, whisk together the powdered sugar and lemon juice to make the lemon frosting.
08 - Drizzle the lemon frosting over the cooled cookies and sprinkle with blue sugar crystals for garnish.
