Butter Pecan Cake (Print Version)

Ingredients:

01 - Unsalted butter: 1 cup, softened for rich texture.

13 - Unsalted butter: 1/2 cup, softened, for the icing base.
14 - Powdered sugar: 4 cups, for sweetness in the icing.
15 - Vanilla extract: 1 tsp, for flavor in the icing.
16 - Milk: 1-2 tbsp, to adjust the icing consistency.

Instructions:

01 - Preheat the oven to 350°F (175°C) and grease and flour a 9x5-inch loaf pan.
02 - Toast the pecans in a dry skillet over medium heat for 5-7 minutes, stirring until golden and fragrant. Set aside.
03 - In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla and butter extracts.
04 - In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined, then fold in the toasted pecans.
05 - Pour the batter into the prepared loaf pan and smooth the top. Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
06 - For the cream cheese icing, beat the softened cream cheese and butter together until smooth. Gradually add the powdered sugar, mixing well. Stir in the vanilla extract and add milk, one tablespoon at a time, until the desired consistency is reached.
07 - Once the cake is completely cooled, spread the cream cheese icing over the top. Garnish with additional chopped pecans if desired.
