Cherry Cupcakes (Print Version)

Ingredients:

01 - 1 1/2 cups all-purpose flour.
02 - 1 cup granulated sugar.
03 - 1/2 cup unsalted butter, softened.
04 - 1/2 cup milk.
05 - 2 large eggs.
06 - 1 1/2 tsp baking powder.
07 - 1/4 tsp salt.
08 - 1 tsp vanilla extract.
09 - 1/2 cup maraschino cherries, chopped (plus extra for garnish).
10 - 1/2 cup unsalted butter, softened.
11 - 2 cups powdered sugar.
12 - 2 tbsp milk.
13 - 1/2 tsp vanilla extract.
14 - 1/4 cup maraschino cherry juice.

Instructions:

01 - Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
02 - In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
03 - Beat in eggs one at a time, then add vanilla extract.
04 - In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture, alternating with milk. Mix until just combined.
05 - Fold in chopped maraschino cherries.
06 - Divide the batter evenly among the cupcake liners. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
07 - Allow cupcakes to cool completely on a wire rack.
08 - Beat softened butter in a bowl until creamy. Gradually add powdered sugar, milk, vanilla extract, and cherry juice. Beat until smooth and fluffy.
09 - Once cupcakes are completely cooled, frost with the cherry-flavored frosting. Garnish with additional maraschino cherries if desired.
