Cherry Pistachio Cheesecake Bars (Print Version)

Ingredients:

01 - 1 ½ cups graham cracker crumbs.
02 - ½ cup unsalted butter (melted).
03 - 16 oz cream cheese (softened).
04 - 1 cup granulated sugar.
05 - 1 tsp vanilla extract.
06 - 3 large eggs.
07 - 1 cup sour cream.
08 - ½ cup chopped pistachios.
09 - 1 ½ cups cherry pie filling.

Instructions:

01 - Preheat your oven to 325°F (165°C). Line a 9x13-inch baking pan with parchment paper.
02 - In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared pan to form a crust.
03 - In a large bowl, beat cream cheese and sugar until smooth. Add vanilla extract and mix well. Add eggs one at a time, beating well after each addition. Mix in sour cream until fully combined.
04 - Pour the cream cheese mixture over the crust and spread evenly. Dollop the cherry pie filling over the cream cheese layer and gently swirl with a knife for a marbled effect. Sprinkle the chopped pistachios on top.
05 - Bake for 40-45 minutes, or until the cheesecake is set and slightly golden around the edges.
06 - Allow the bars to cool to room temperature, then refrigerate for at least 2 hours before cutting into squares.
