Chocolate Chip Cheesecake Bars (Print Version)

Ingredients:

01 - 40 oz refrigerated chocolate chip cookie dough.
02 - 16 oz cream cheese (room temperature).
03 - 1 large egg (room temperature).
04 - ¼ cup granulated sugar.
05 - ½ tsp vanilla extract.
06 - 1 tsp lemon juice (optional).

Instructions:

01 - Set to 350°F (175°C).
02 - Freeze the cookie dough for a few hours to make slicing easier.
03 - Line a 13x9" pan with parchment paper or non-stick foil.
04 - Slice half of the cookie dough into ¼" slices and press into the bottom of the pan. Bake for 10 minutes.
05 - Beat softened cream cheese, egg, sugar, vanilla, and lemon juice (if using) until smooth. Spread evenly over the baked crust.
06 - Slice the remaining cookie dough and layer it on top of the cheesecake mixture.
07 - Return to the oven for 35-40 minutes, or until set and golden.
08 - Cool completely, then refrigerate before serving.
