Cookie Dough Bars (Print Version)

Ingredients:

01 - 1/2 cup unsalted butter, softened.
02 - 1/2 cup packed brown sugar.
03 - 1/4 cup granulated sugar.
04 - 1 tsp vanilla extract.
05 - 1 cup all-purpose flour.
06 - 1/2 tsp salt.
07 - 1 1/2 cups mini chocolate chips, divided.
08 - 1 pint vanilla ice cream, softened.
09 - 10 oz milk chocolate, melted (for coating).

Instructions:

01 - In a bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth. Mix in the vanilla extract.
02 - Gradually add flour and salt, mixing until well combined. Fold in 3/4 cup mini chocolate chips.
03 - Line a loaf pan with parchment paper. Press half of the cookie dough evenly into the pan.
04 - Spread softened vanilla ice cream over the cookie dough layer and smooth it out.
05 - Press the remaining cookie dough on top, covering the ice cream.
06 - Freeze the pan for at least 2 hours or until firm.
07 - Remove from the pan, cut into bars, and dip each bar into melted milk chocolate.
08 - Sprinkle remaining mini chocolate chips on top, then freeze for another 15-20 minutes until the chocolate sets.

Notes:

01 - For the best texture, ensure the vanilla ice cream is softened but not melted before layering.
02 - Use mini chocolate chips for easier mixing and even distribution throughout the cookie dough.
