Cookie Dough Bars (Print Version)
Ingredients:

1/2 cup unsalted butter, softened.

1/2 cup packed brown sugar.

1/4 cup granulated sugar.

1 tsp vanilla extract.

1 cup all-purpose flour.

1/2 tsp salt.

1 1/2 cups mini chocolate chips, divided.

1 pint vanilla ice cream, softened.

10 oz milk chocolate, melted (for coating).
Instructions:

In a bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth. Mix in the vanilla extract.

Gradually add flour and salt, mixing until well combined. Fold in 3/4 cup mini chocolate chips.

Line a loaf pan with parchment paper. Press half of the cookie dough evenly into the pan.

Spread softened vanilla ice cream over the cookie dough layer and smooth it out.

Press the remaining cookie dough on top, covering the ice cream.

Freeze the pan for at least 2 hours or until firm.

Remove from the pan, cut into bars, and dip each bar into melted milk chocolate.

Sprinkle remaining mini chocolate chips on top, then freeze for another 15-20 minutes until the chocolate sets.
