Cherry Rice Krispies (Print Version)
Ingredients:
01 -
6 cups Rice Krispies cereal.
02 -
¼ cup unsalted butter.
03 -
10 oz mini marshmallows.
04 -
1 tsp vanilla extract.
05 -
1 cup maraschino cherries, drained and chopped.
06 -
1½ cups semi-sweet chocolate chips.
07 -
1 tbsp coconut oil (optional, for smoother chocolate).
Instructions:
01 -
In a large pot, melt the butter over medium heat. Add the marshmallows and stir constantly until smooth. Mix in the vanilla extract.
02 -
Remove from heat and quickly stir in the Rice Krispies cereal and chopped maraschino cherries until everything is well combined.
03 -
Grease a 9x13-inch baking dish or line it with parchment paper. Press the mixture into the pan with a greased spatula to create an even layer. Let it cool completely.
04 -
In a microwave-safe bowl, melt the semi-sweet chocolate chips with the coconut oil (if using) in 30-second intervals, stirring in between until fully melted and smooth.
05 -
Drizzle the melted chocolate over the cooled Rice Krispies treats or dip each square partially into the chocolate. Place them on parchment paper to allow the chocolate to set.
06 -
Once the chocolate has hardened, cut into squares and enjoy.
Notes:
01 -
Optional coconut oil helps to make the melted chocolate smoother for coating.
02 -
Ensure the cherries are drained well to prevent excess moisture from affecting the texture.
