Chocolate Raspberry Cookies (Print Version)

Ingredients:

01 - 1 cup all-purpose flour.
02 - 1/2 cup unsweetened cocoa powder.
03 - 1/2 tsp baking powder.
04 - 1/4 tsp salt.
05 - 1/2 cup unsalted butter (softened).
06 - 1/2 cup granulated sugar.
07 - 1/4 cup brown sugar.
08 - 1 large egg.
09 - 1/2 tsp vanilla extract.
10 - 1/4 cup raspberry jam.

Instructions:

01 - Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
02 - In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
03 - In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
04 - Beat in the egg and vanilla extract until well combined.
05 - Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
06 - Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
07 - Bake for 10-12 minutes, or until the cookies are set but still soft in the center. Allow to cool completely on a wire rack.
08 - Once cooled, spread a teaspoon of raspberry jam on the bottom of half of the cookies and top with the remaining cookies to form sandwiches.
