Churro Cheesecake Cookies (Print Version)

Ingredients:

01 - 1 package refrigerated sugar cookie dough.
02 - 4 oz cream cheese, softened.
03 - ¼ cup granulated sugar.
04 - ½ tsp vanilla extract.
05 - ¼ cup melted butter.
06 - ¼ cup cinnamon sugar (mix ¼ cup sugar with 1 tsp cinnamon).

Instructions:

01 - Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
02 - Roll the sugar cookie dough into small balls and place them on the prepared baking sheet. Gently press each one down to flatten slightly.
03 - In a small bowl, mix together the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
04 - Spoon a small amount of the cream cheese mixture into the center of each cookie dough ball.
05 - Bake the cookies for 10-12 minutes, or until the edges are golden and the centers are set.
06 - While still warm, brush each cookie with melted butter for extra flavor.
07 - Roll the warm cookies in the cinnamon sugar mixture, coating them fully for that signature churro flavor.
08 - Let the cookies cool slightly before enjoying the delicious combination of churro and cheesecake in every bite.

Notes:

01 - Brushing the cookies with melted butter while warm helps the cinnamon sugar stick better and adds extra richness.
