Cinnamon Roll Cookies (Print Version)

Ingredients:

01 - 2 cups all-purpose flour.
02 - 1/2 tsp baking powder.
03 - 1/4 tsp salt.
04 - 1/2 cup unsalted butter (room temperature).
05 - 3/4 cup granulated sugar.
06 - 1 large egg.
07 - 1 tsp vanilla extract.
08 - 1/4 cup brown sugar (for filling).
09 - 1 tbsp ground cinnamon (for filling).
10 - 1 cup powdered sugar (for glaze).
11 - 2 tbsp milk (for glaze).

Instructions:

01 - Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
02 - In a bowl, whisk together the flour, baking powder, and salt. Set aside.
03 - In a large bowl, beat the softened butter and granulated sugar together until light and creamy. Add the egg and vanilla extract, mixing until well combined.
04 - Gradually add the dry ingredients to the butter mixture, mixing until just combined to form a smooth dough.
05 - Roll the dough into a large rectangle on a lightly floured surface.
06 - In a small bowl, mix together the brown sugar and cinnamon. Sprinkle this mixture evenly over the rolled-out dough.
07 - Starting from one end, roll the dough tightly into a log. Slice the log into round cookies, about 1/2 inch thick.
08 - Place the sliced cookies on the prepared baking sheet, spacing them about 2 inches apart.
09 - Bake the cookies for 10-12 minutes, or until the edges are golden brown.
10 - In a small bowl, whisk together the powdered sugar and milk until smooth to create the glaze.
11 - Drizzle the glaze over the warm cookies and let them cool for a few minutes before serving.
