Churro Cookies (Print Version)

Ingredients:

01 - 1 cup unsalted butter, softened.
02 - 1 cup granulated sugar.
03 - ½ cup packed brown sugar.
04 - 2 large eggs.
05 - 1 tsp vanilla extract.
06 - 2½ cups all-purpose flour.
07 - 1 tsp baking soda.
08 - ½ tsp salt.
09 - 2 tsp ground cinnamon.
10 - ¼ cup sugar (for rolling).
11 - ½ tsp ground cinnamon (for rolling).
12 - 1 cup chocolate chips or chocolate chunks (for stuffing).

Instructions:

01 - Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
02 - In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
03 - Beat in the eggs one at a time, then stir in the vanilla extract.
04 - In a separate bowl, whisk together the flour, baking soda, salt, and 2 tsp of ground cinnamon.
05 - Gradually add the dry ingredients to the wet mixture and stir until just combined.
06 - In a small bowl, mix the ¼ cup sugar and ½ tsp ground cinnamon for the cinnamon-sugar coating.
07 - Take a tablespoon of dough, flatten it, place a few chocolate chips or a chunk in the center, and fold the dough to seal.
08 - Roll the stuffed dough balls in the cinnamon-sugar mixture.
09 - Place the dough balls on the prepared baking sheet and bake for 10-12 minutes, or until the edges are lightly golden.
10 - Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
