Cotton Candy Cake (Print Version)

Instructions:

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, beat the softened butter and granulated sugar until light and fluffy. Add the egg whites one at a time, beating well after each addition, then mix in the vanilla extract.

Gradually add the flour mixture and milk alternately to the butter mixture, mixing until just combined. Split the batter into two portions. Color one portion pink and the other blue, then fold in the chopped cotton candy.

Pour the batter into the prepared pans, creating a marbled effect by swirling the pink and blue batters together with a knife or skewer.

Bake the cakes for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool completely in the pans before removing.

To make the frosting, beat the softened butter until creamy. Gradually add the powdered sugar, mixing well after each addition. Add the vanilla extract and enough milk to reach your desired consistency. Divide the frosting and color one portion pink and the other blue.

To assemble the cake, place one cake layer on a serving plate and frost with either the pink or blue frosting. Place the second layer on top and frost with the remaining frosting, alternating colors as desired. Garnish with additional cotton candy just before serving.
