Cotton Candy Eclairs (Print Version)
Ingredients:

1 cup all-purpose flour.

1/2 cup unsalted butter.

1 cup water.

4 large eggs.

1/4 teaspoon salt.

1 cup cotton candy (fluff).

1 cup heavy cream.

1 teaspoon vanilla extract.

1/2 cup powdered sugar.
Instructions:

Preheat the oven to 400°F (200°C).

In a saucepan, combine water, butter, and salt. Bring to a boil.

Once boiling, remove from heat and add flour. Stir until the mixture pulls away from the sides of the pan.

Let it cool for a few minutes, then add eggs one at a time, mixing well after each addition until smooth.

Line a baking sheet with parchment paper.

Transfer the choux pastry to a piping bag fitted with a large round tip. Pipe 4-inch lines onto the baking sheet, leaving space between each.

Bake for 25-30 minutes until golden and puffed. Allow to cool completely.

In a mixing bowl, whip heavy cream until soft peaks form.

Gradually add powdered sugar and vanilla extract, then fold in the cotton candy until well combined.

Once the eclairs are cool, use a sharp knife to make a small slit in the side of each. Fill a piping bag with the cotton candy cream and pipe into each eclair until filled.

Arrange the filled eclairs on a platter. Optionally, garnish with extra cotton candy on top.
