Cotton Candy Cupcakes (Print Version)

Ingredients:

01 - 1 cup sugar.
02 - ¼ tsp baking soda.
03 - 1 ¼ tsp baking powder.
04 - 1 ⅔ cups all-purpose flour.
05 - 3 egg whites.
06 - 1 ½ tsp cotton candy extract.
07 - ½ cup sour cream.
08 - ½ cup milk.
09 - ¾ cup melted butter, cooled.
10 - Pink and blue icing color.
11 - ½ cup butter.
12 - ½ cup shortening.
13 - 4 cups powdered sugar.
14 - 2–3 tbsp water or cream.
15 - Cotton candy or cotton candy-flavored suckers for decoration.

Instructions:

01 - Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
02 - In a large bowl, whisk together flour, sugar, baking soda, and baking powder.
03 - Add egg whites, cotton candy extract, sour cream, and milk. Stir until smooth, then mix in the melted butter.
04 - Divide the batter evenly between two bowls. Color one pink and the other blue.
05 - Fill cupcake liners with alternating spoonfuls of pink and blue batter. Bake for 18–20 minutes until a toothpick comes out clean.
06 - For the frosting, cream together butter and shortening. Gradually mix in powdered sugar, cotton candy extract, and cream until smooth.
07 - Divide the frosting into two portions and color one pink and the other blue.
08 - Use a piping bag to swirl pink and blue frosting onto cooled cupcakes.
09 - Top with cotton candy or cotton candy-flavored suckers for decoration.

Notes:

01 - Optional: Use cotton candy-flavored suckers as a playful topping.
02 - Make sure the butter has cooled before adding to the batter to prevent curdling.
