Ingredients:

2 lbs ground beef.

2 tablespoons olive oil.

1 medium yellow onion, diced.

4 medium Yukon gold potatoes, cut into 1-inch pieces (approx. 1 lb).

4 carrots, peeled and sliced into rounds.

1 (14.5-ounce) can green beans, drained.

1 (14.5-ounce) can diced tomatoes with juices.

1 (15-ounce) can black-eyed peas, drained and rinsed.

1 (15-ounce) can corn, drained.

3 tablespoons tomato paste.

4-6 cups beef broth.

2 teaspoons Italian seasoning.

1 teaspoon smoked paprika.

2 teaspoons chili powder.

Instructions:

Heat olive oil in a large Dutch oven over medium-high heat. Sauté onion and celery for 2-3 minutes until translucent. Add minced garlic and cook for another 1-2 minutes until fragrant.

Add ground beef, breaking it up as it cooks, and cook until no pink remains.

Stir in potatoes, carrots, green beans, diced tomatoes with their juices, black-eyed peas, corn, tomato paste, and spices. Add 4 cups of beef broth, adjusting the consistency with more broth if needed.

Bring to a boil, then reduce heat to medium-low. Cover and simmer for 14-16 minutes until potatoes are tender.

Taste the soup and season with salt, pepper, and red pepper flakes as needed.
