Cowboy Soup (Print Version)

Ingredients:

01 - 2 lbs ground beef.
02 - 2 tablespoons olive oil.
03 - 1 medium yellow onion, diced.
04 - 3 stalks celery, diced.
05 - 4 cloves garlic, minced.
06 - 4 medium Yukon gold potatoes, cut into 1-inch pieces (approx. 1 lb).
07 - 4 carrots, peeled and sliced into rounds.
08 - 1 (14.5-ounce) can green beans, drained.
09 - 1 (14.5-ounce) can diced tomatoes with juices.
10 - 1 (15-ounce) can black-eyed peas, drained and rinsed.
11 - 1 (15-ounce) can corn, drained.
12 - 3 tablespoons tomato paste.
13 - 4-6 cups beef broth.
14 - 2 teaspoons Italian seasoning.
15 - 1 teaspoon smoked paprika.
16 - 2 teaspoons chili powder.
17 - Salt, pepper, and red pepper flakes to taste.

Instructions:

01 - Heat olive oil in a large Dutch oven over medium-high heat. Sauté onion and celery for 2-3 minutes until translucent. Add minced garlic and cook for another 1-2 minutes until fragrant.
02 - Add ground beef, breaking it up as it cooks, and cook until no pink remains.
03 - Stir in potatoes, carrots, green beans, diced tomatoes with their juices, black-eyed peas, corn, tomato paste, and spices. Add 4 cups of beef broth, adjusting the consistency with more broth if needed.
04 - Bring to a boil, then reduce heat to medium-low. Cover and simmer for 14-16 minutes until potatoes are tender.
05 - Taste the soup and season with salt, pepper, and red pepper flakes as needed.
06 - Ladle into bowls and garnish with desired toppings such as shredded cheese or tortilla chips. Serve warm.
