Creamy Parmesan Beef Rigatoni (Print Version)

Ingredients:

01 - 12 oz rigatoni pasta.
02 - 1 lb beef sirloin or stew meat, cut into bite-sized pieces.
03 - Salt and pepper, to taste.
04 - 2 tbsp olive oil.
05 - 1 small onion, diced.
06 - 3 cloves garlic, minced.
07 - 1 cup beef broth.
08 - 1 cup heavy cream.
09 - 1/2 cup grated Parmesan cheese.
10 - 1 tsp Italian seasoning.
11 - Fresh parsley, chopped (for garnish).

Instructions:

01 - Bring a large pot of salted water to a boil. Cook rigatoni according to package instructions until al dente. Drain and set aside.
02 - Season beef pieces with salt and pepper. In a large skillet over medium-high heat, add olive oil and sear beef on all sides until browned (about 5-6 minutes). Remove from skillet and set aside.
03 - In the same skillet, add diced onion and minced garlic. Sauté for 3-4 minutes until softened and fragrant.
04 - Pour in beef broth, scraping up any browned bits from the pan. Stir in heavy cream, Parmesan cheese, and Italian seasoning. Simmer for 5 minutes, until the sauce starts to thicken.
05 - Return beef to the skillet, add the cooked rigatoni, and toss everything together in the creamy sauce. Simmer for another 2-3 minutes to meld flavors.
06 - Garnish with fresh parsley and additional Parmesan, if desired. Serve hot.
