Ingredients:

1 lb deboned Italian sausage.

1 tbsp olive oil.

1 small onion, chopped.

2 cloves garlic, minced.

1 can (14.5 oz) diced tomatoes, drained.

2 quarts chicken stock.

1/2 cup heavy cream.

1 cup elbow or ditalini pasta.

1/2 cup shredded Parmesan cheese.

1/2 tsp dried basil.

1/2 tsp dried oregano.

Salt and pepper to taste.

Fresh parsley, chopped (for garnish).
Instructions:

Heat a large saucepan over medium heat with 1 tbsp olive oil.

Add Italian sausage, breaking it up while cooking until browned. Remove and set aside.

In the same pan, sauté chopped onion and minced garlic until fragrant and the onion becomes translucent.

Add the drained diced tomatoes, chicken stock, dried basil, and oregano. Stir to combine.

Bring the mixture to a gentle simmer. Add the cooked sausage back into the pot.

Stir in the ditalini pasta and cook until al dente, as per package instructions.
