Parmesan Sausage Soup (Print Version)

Ingredients:

01 - 1 lb deboned Italian sausage.
02 - 1 tbsp olive oil.
03 - 1 small onion, chopped.
04 - 2 cloves garlic, minced.
05 - 1 can (14.5 oz) diced tomatoes, drained.
06 - 2 quarts chicken stock.
07 - 1/2 cup heavy cream.
08 - 1 cup elbow or ditalini pasta.
09 - 1/2 cup shredded Parmesan cheese.
10 - 1/2 tsp dried basil.
11 - 1/2 tsp dried oregano.
12 - Salt and pepper to taste.
13 - Fresh parsley, chopped (for garnish).

Instructions:

01 - Heat a large saucepan over medium heat with 1 tbsp olive oil.
02 - Add Italian sausage, breaking it up while cooking until browned. Remove and set aside.
03 - In the same pan, sauté chopped onion and minced garlic until fragrant and the onion becomes translucent.
04 - Add the drained diced tomatoes, chicken stock, dried basil, and oregano. Stir to combine.
05 - Bring the mixture to a gentle simmer. Add the cooked sausage back into the pot.
06 - Stir in the ditalini pasta and cook until al dente, as per package instructions.
07 - Lower the heat and add the heavy cream, stirring to blend.
08 - Stir in the shredded Parmesan cheese until melted and incorporated. Season with salt and pepper to taste.
09 - Serve warm, garnished with chopped fresh parsley.
