Crispy Roasted Cauliflower (Print Version)

Ingredients:

01 - 1 large cauliflower, cut into florets (slice large pieces in half).
02 - 6 tablespoons olive oil.
03 - 1 teaspoon Old Bay seasoning.
04 - 1/2 teaspoon chili pepper.
05 - Fresh ground pepper (to taste).
06 - 8 oz sharp white cheddar cheese, grated.
07 - 4 oz parmesan cheese, grated.

Instructions:

01 - Preheat oven to 450°F (230°C). Cut cauliflower into florets, slicing large pieces in half.
02 - Place cauliflower in a large bowl, drizzle with 6 tbsp olive oil, and toss to coat.
03 - Season with 1/2 tsp Old Bay seasoning, 1/4 tsp chili pepper, and fresh ground pepper. Toss again to coat.
04 - Spread cauliflower onto a foil-lined baking sheet, ensuring florets are in a single layer.
05 - Roast on the top rack for 15 minutes.
06 - While baking, grate the cheddar and parmesan cheeses.
07 - Remove cauliflower, sprinkle with cheese, and return to the oven for 7–10 minutes, until crispy.
08 - Scrape crispy cheese from the pan, serve, and enjoy!.
