Creamy Tortellini (Print Version)

Ingredients:

01 - 20 oz cheese tortellini (refrigerated or frozen).
02 - 1 lb Italian sausage (optional).
03 - 2 cups spinach (fresh or frozen).
04 - 4 cups chicken broth.
05 - 1 cup heavy cream.
06 - 1/2 cup grated Parmesan cheese.
07 - 1/2 tsp garlic powder.
08 - 1/2 tsp Italian seasoning.
09 - 1/4 tsp black pepper.
10 - 1 cup shredded mozzarella cheese.

Instructions:

01 - In a skillet, cook the Italian sausage until browned, if using. Drain excess fat and set aside.
02 - In a crockpot, combine chicken broth, heavy cream, Parmesan cheese, garlic powder, Italian seasoning, and black pepper. Add the browned sausage (if using) and spinach.
03 - Cover and cook on low for 3-4 hours.
04 - Stir in the tortellini and mozzarella cheese. Cook on high for an additional 30 minutes, until the tortellini is tender and the cheese is melted.
05 - Serve warm with extra Parmesan cheese on top.

Notes:

01 - This creamy tortellini dish is perfect for a comforting weeknight dinner. The sausage is optional, so it can easily be made vegetarian by omitting the meat.
02 - Serve with a side of garlic bread or a light salad for a complete meal.
