Ingredients:

01 - 1 cup rice flour (for the batter).
02 - ⅓ cup tapioca starch (for the batter).
03 - 3 cups water (for the batter).
04 - 1 tsp cooking oil (for the batter).
05 - Pinch of salt (for the batter).
06 - Cooked shrimp, diced (optional filling).
07 - Minced beef or pork, cooked (optional filling).
08 - Fried shallots (to garnish).
09 - 3 tbsp soy sauce (for dipping sauce).
10 - 1 tbsp water (for dipping sauce).
11 - 1 tsp sugar (for dipping sauce).
12 - 1 tsp sesame oil (for dipping sauce).

Instructions:

01 - In a bowl, combine rice flour, tapioca starch, water, oil, and salt. Mix until smooth and let the batter rest for 30 minutes.
02 - Prepare a steaming station with a steaming tray or pan. Lightly grease the tray to prevent sticking.
03 - Pour a thin layer of batter onto the tray. Steam for 2–3 minutes until the batter solidifies.
04 - If using fillings, scatter cooked shrimp, minced meat, or other choices over the steamed sheet. Steam for an additional minute.
05 - Using a spatula, roll the noodle sheet into a tight cylinder. Repeat with the remaining batter and fillings.
06 - Mix soy sauce, water, sugar, and sesame oil in a small bowl to prepare the dipping sauce.
07 - Slice the rolled noodles into smaller pieces, garnish with fried shallots, and serve warm with dipping sauce.
