Ingredients:

1 cup rice flour (for the batter).

Instructions:

In a bowl, combine rice flour, tapioca starch, water, oil, and salt. Mix until smooth and let the batter rest for 30 minutes.

Prepare a steaming station with a steaming tray or pan. Lightly grease the tray to prevent sticking.

Pour a thin layer of batter onto the tray. Steam for 2–3 minutes until the batter solidifies.

If using fillings, scatter cooked shrimp, minced meat, or other choices over the steamed sheet. Steam for an additional minute.

Using a spatula, roll the noodle sheet into a tight cylinder. Repeat with the remaining batter and fillings.

Mix soy sauce, water, sugar, and sesame oil in a small bowl to prepare the dipping sauce.

Slice the rolled noodles into smaller pieces, garnish with fried shallots, and serve warm with dipping sauce.
