Homemade Gumdrops (Print Version)

# Ingredients:

01 - 2½ cups granulated sugar (divided).
02 - 1⅓ cups unsweetened applesauce.
03 - 6 ounces Jello (lime or cherry).
04 - 2 envelopes unflavored gelatin (like Knox).

# Instructions:

01 - Spray 11x7 or 9x13 baking dish with non-stick spray.
02 - Mix 2 cups sugar and all other ingredients in large saucepan, let rest 1 minute.
03 - Boil over medium heat while stirring constantly.
04 - Boil for 1 minute then pour into greased dish.
05 - Cool at room temperature for 15 minutes.
06 - Refrigerate for 3 hours until firm.
07 - Prepare cutting board with parchment paper and sugar.
08 - Loosen mixture with metal spatula and transfer to board.
09 - Cut shapes with mini cookie cutters.
10 - Let gumdrops sit overnight (minimum 8 hours).
11 - Roll each piece in remaining sugar until coated.

# Notes:

01 - For red and green gumdrops, make two batches using different Jello flavors.
02 - Heat cookie cutters in hot water for easier cutting.
03 - Can use pizza cutter or knife if no cookie cutters available.
