Espresso Fudge Cookies (Print Version)

Ingredients:

01 - 1 cup unsalted butter (2 sticks).
02 - 1 cup granulated sugar.
03 - 1 cup packed brown sugar.
04 - 2 large eggs.
05 - 2 tsp vanilla extract.
06 - 2 1/4 cups all-purpose flour.
07 - 1/2 cup unsweetened cocoa powder.
08 - 1/2 tsp baking soda.
09 - 1/4 tsp salt.
10 - 1 tbsp instant espresso powder.
11 - 1 cup chocolate chips.

Instructions:

01 - Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
02 - In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
03 - Beat in the eggs one at a time, then stir in the vanilla extract.
04 - In a separate bowl, whisk together the flour, cocoa powder, baking soda, salt, and instant espresso powder.
05 - Gradually add the dry ingredients to the butter mixture, mixing until just combined.
06 - Fold in the chocolate chips.
07 - Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
08 - Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
09 - Allow cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
