Halloween Whoopie Pies (Print Version)

Ingredients:

01 - 2 cups all-purpose flour.
02 - 1/2 cup cocoa powder.
03 - 1 1/4 teaspoon baking soda.
04 - 1/2 teaspoon baking powder.
05 - 1/4 teaspoon salt.
06 - 1/2 cup unsalted butter, softened.
07 - 1 cup granulated sugar.
08 - 1 large egg.
09 - 1 teaspoon vanilla extract.
10 - 1 cup whole milk.
11 - 1/2 cup unsalted butter, softened (for filling).
12 - 1 1/2 cups powdered sugar (for filling).
13 - 1 teaspoon vanilla extract (for filling).
14 - 2-3 tablespoons heavy cream (for filling).
15 - Orange food coloring (for filling).

Instructions:

01 - Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
02 - In a bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
03 - In a separate large bowl, cream together the butter and sugar until light and fluffy.
04 - Add the egg and vanilla extract, beating until well combined.
05 - Alternate adding the dry ingredients and milk to the butter mixture, starting and ending with the dry ingredients. Mix until smooth.
06 - Drop spoonfuls of the batter onto the prepared baking sheets, leaving space between each.
07 - Bake for 10-12 minutes, until the cookies are set. Allow them to cool completely.
08 - For the filling, beat together the butter, powdered sugar, vanilla extract, and heavy cream until light and fluffy. Add orange food coloring and mix until the desired shade is reached.
09 - Spread or pipe the filling onto the flat side of half the cookies, then top with another cookie to create sandwiches.

Notes:

01 - Add spooky sprinkles or edible googly eyes for an extra fun Halloween touch.
02 - Store in an airtight container for up to 3 days to keep the cookies soft and fresh.
