High Protein Banana Bread (Print Version)

1 1/2 cups all-purpose flour (or GF baking mix).

3/4 cup vanilla protein powder.

1/2 cup keto sweetener (like erythritol).

1/2 cup melted unsalted butter (or coconut oil).

2 ripe bananas, mashed.

1/4 cup milk (any variety).

1 1/2 tsp baking powder.

1/2 cup unsweetened shredded coconut (optional).

Instructions:

Preheat oven to 350°F and lightly grease a 5x9-inch loaf pan.

In a bowl, whisk together sweetener, melted butter, and eggs until smooth. Stir in the mashed bananas.
