High Protein Banana Bread (Print Version)

Ingredients:

01 - 1 1/2 cups all-purpose flour (or GF baking mix).
02 - 3/4 cup vanilla protein powder.
03 - 1/2 cup keto sweetener (like erythritol).
04 - 1/2 cup melted unsalted butter (or coconut oil).
05 - 2 large eggs.
06 - 2 ripe bananas, mashed.
07 - 1/4 cup milk (any variety).
08 - 1 1/2 tsp baking powder.
09 - 1/2 tsp salt.
10 - 1/2 cup unsweetened shredded coconut (optional).
11 - 3/4 cup chocolate chips (optional).

Instructions:

01 - Preheat oven to 350°F and lightly grease a 5x9-inch loaf pan.
02 - In a bowl, whisk together sweetener, melted butter, and eggs until smooth. Stir in the mashed bananas.
03 - Add milk, baking powder, and salt, and mix until combined.
04 - Gradually stir in the flour and protein powder until the batter is smooth. Fold in shredded coconut and half of the chocolate chips, if using.
05 - Pour the batter into the prepared loaf pan and sprinkle the remaining chocolate chips on top.
06 - Bake for 40 minutes. Cover with foil and bake for an additional 15-20 minutes, until a toothpick inserted into the center comes out clean.
07 - Allow the banana bread to cool in the pan for 10-15 minutes, then transfer to a cooling rack. Slice and enjoy!.
