Preheat oven to 350°F and lightly grease a 5x9-inch loaf pan.

In a bowl, whisk together sweetener, melted butter, and eggs until smooth. Stir in the mashed bananas.

Add milk, baking powder, and salt, and mix until combined.

Gradually stir in the flour and protein powder until the batter is smooth. Fold in shredded coconut and half of the chocolate chips, if using.

Pour the batter into the prepared loaf pan and sprinkle the remaining chocolate chips on top.

Bake for 40 minutes. Cover with foil and bake for an additional 15-20 minutes, until a toothpick inserted into the center comes out clean.
