Hot Pockets (Print Version)

Ingredients:

01 - 1 cup warm water.
02 - 1 tbsp granulated sugar.
03 - 1 tbsp active dry yeast.
04 - 1 tbsp olive oil.
05 - 2 1/4 cups all-purpose flour (plus extra for dusting).
06 - 1 tsp salt.
07 - 3/4 cup pizza sauce.
08 - 1/2 cup quartered pepperoni (or diced ham).
09 - 1 cup shredded mozzarella cheese.
10 - 1 cup shredded cheddar cheese.

Instructions:

01 - In a mixing bowl, combine warm water, sugar, and yeast. Let the mixture sit for 5 minutes until frothy.
02 - Add olive oil, flour, and salt to the yeast mixture. Stir until a sticky dough forms.
03 - Transfer the dough to a floured surface and knead until smooth, adding up to 1/2 cup extra flour if needed.
04 - Place the dough in a greased bowl, cover it with a towel, and let rise for about 30 minutes or until doubled in size.
05 - Preheat your oven to 450°F and line a baking sheet with parchment paper.
06 - Divide the dough into equal portions. Roll each portion into a circle about the size of your hand.
07 - Spread a spoonful of pizza sauce onto each dough circle. Add pepperoni, mozzarella, and cheddar cheese as desired.
08 - Fold the dough in half over the filling, and pinch the edges tightly to seal.
09 - Place the filled pockets on the prepared baking sheet. Bake for 10-15 minutes, or until the pockets are golden brown.
10 - Cool slightly before serving. Enjoy warm or save for meal prep!.
