Heat oven to 450°F.

Roll dough into 1/8-inch circle and place in a 9-inch pie plate.

Trim edges to 1/2 inch, flute the rim, and chill for 30 minutes.

Cover crust with double foil and add pie weights.

Bake on lower rack for 15-20 minutes until edges turn light golden.

Remove weights and foil, then bake 3-6 minutes more until bottom browns.

Cool crust and lower oven to 375°F.

Mix sugar and cornstarch in a large saucepan.

Stir in milk until smooth and bring to boil. Reduce heat, cook while stirring for 2 minutes until thick.

Remove from heat, stir in butter and vanilla.

Pour into crust and sprinkle with cinnamon.

Cool then chill in the fridge.
