Strawberry Cheesecake Cookies (Print Version)

Ingredients:

01 - Unsalted butter, softened: 1 cup.
02 - Granulated sugar: 1 cup.
03 - Brown sugar, packed: 1/2 cup.
04 - Large eggs: 2.
05 - Vanilla extract: 1 teaspoon.
06 - All-purpose flour: 2 1/2 cups.
07 - Baking soda: 1 teaspoon.
08 - Salt: 1/2 teaspoon.
09 - White chocolate chips: 1 cup.
10 - Strawberry jam: 1/2 cup.
11 - Cream cheese, softened: 1/2 cup.

Instructions:

01 - Preheat the oven to 350°F (175°C) and line a baking tray with parchment paper.
02 - In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
03 - In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and mix until combined. Fold in the white chocolate chips.
04 - For the filling, mix the softened cream cheese with the strawberry jam until smooth.
05 - Form dough balls of about 1 tablespoon each and place them on the prepared baking tray. Make an indentation in the center of each ball and fill it with the strawberry-cream cheese mixture.
06 - Bake for 12-15 minutes or until the edges are golden. Allow the cookies to cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
