Rainbow Cupcakes (Print Version)

Ingredients:

01 - 3/4 cup water.
02 - 1/4 cup applesauce or yogurt.
03 - 1/4 cup oil.
04 - 2 tsp pure vanilla extract.
05 - 1 tsp white or cider vinegar.
06 - 1 cup flour (spelt, white, or gluten-free).
07 - 3/4 cup sugar.
08 - 1/4 cup + 2 tbsp cocoa powder (Dutch or regular).
09 - 1/2 cup mini chocolate chips (optional).
10 - 1/2 tsp + 1/8 tsp salt.
11 - 1/2 tsp baking soda.
12 - Pre-made rainbow unicorn dip (or colorful frosting) for filling.
13 - Melted chocolate, frosting, or sprinkles for decorating.

Instructions:

01 - Preheat oven to 350°F and line a muffin tin with liners.
02 - In a bowl, whisk together water, applesauce, oil, vanilla, and vinegar; let sit for 10 minutes.
03 - In another bowl, sift together flour, sugar, cocoa, salt, and baking soda. Add the dry mixture to the wet mixture and mix until smooth.
04 - Fill cupcake liners about 2/3 full. Bake for 20 minutes or until a toothpick inserted into the center comes out mostly clean.
05 - Once cooled, use a piping bag or spoon to add rainbow filling to the center of each cupcake.
06 - Top with melted chocolate, frosting, or sprinkles as desired.
