Maple Ginger Chicken (Print Version)

Ingredients:

01 - 4 chicken thighs, skin on.
02 - 1 fennel bulb, sliced.
03 - 1 red onion, sliced.
04 - 2 tablespoons olive oil.
05 - 1/4 cup maple syrup.
06 - 1 tablespoon fresh ginger, grated.
07 - 2 tablespoons apple cider vinegar.
08 - 1 teaspoon Dijon mustard.
09 - Salt and pepper to taste.
10 - Fresh thyme (optional for garnish).

Instructions:

01 - Preheat the oven to 400°F (200°C) and lightly grease a baking tray.
02 - In a small bowl, whisk together the maple syrup, grated ginger, apple cider vinegar, Dijon mustard, and olive oil.
03 - Place the chicken thighs, sliced fennel, and red onion on the tray. Season with salt and pepper.
04 - Pour the maple ginger glaze over the chicken and vegetables, ensuring everything is well coated.
05 - Roast in the oven for 35-40 minutes, basting occasionally, until the chicken is cooked through and golden.
06 - Garnish with fresh thyme before serving for an extra burst of flavor.

Notes:

01 - For crispier chicken skin, broil the traybake for the last 5 minutes of cooking.
02 - Serve with roasted potatoes or a light salad for a complete meal.
