Milk Chocolate Stuffed Jack-O-Lantern Cookies (Print Version)

Ingredients:

01 - 1 cup unsalted butter, softened.
02 - 1 cup granulated sugar.
03 - 1 cup packed brown sugar.
04 - 2 large eggs.
05 - 1 tsp vanilla extract.
06 - 3½ cups all-purpose flour.
07 - 1 tsp baking powder.
08 - ½ tsp baking soda.
09 - ½ tsp salt.
10 - ½ tsp ground cinnamon.
11 - ½ tsp ground nutmeg.
12 - ½ cup milk chocolate chips or chunks (for dough).
13 - 1 cup milk chocolate chips or chunks (for filling).
14 - Orange icing (for decoration).
15 - Black icing (for decoration).

Instructions:

01 - In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
02 - Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
03 - In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
04 - Melt 1 cup of milk chocolate chips in the microwave, stirring every 20 seconds until smooth.
05 - Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
06 - Take a tablespoon of cookie dough, flatten it into a disk, and place a small dollop of melted chocolate in the center. Cover with another disk of dough, sealing the edges to enclose the chocolate filling, and shape into a round cookie.
07 - Place the filled cookies on the prepared baking sheets.
08 - Bake for 10-12 minutes, until the edges are lightly golden. Allow the cookies to cool on the sheets for 5 minutes before transferring to a wire rack to cool completely.
09 - Once cooled, use orange icing to decorate the cookies with a jack-o-lantern face, and black icing for the features.
10 - Serve with milk or share at Halloween gatherings!.
