Mini Caramel Apple Pies (Print Version)

Ingredients:

01 - 3 cups apples, peeled, cored, and diced (about 3 medium apples).
02 - 1/2 cup granulated sugar.
03 - 1/4 cup packed brown sugar.
04 - 1 tsp ground cinnamon.
05 - 1/4 tsp ground nutmeg.
06 - 2 tbsp all-purpose flour.
07 - 1 tbsp lemon juice.
08 - 1/2 cup caramel sauce.
09 - 1 package refrigerated pie crusts (or homemade if preferred).
10 - 1 egg, beaten (for egg wash).
11 - 1 tbsp granulated sugar (for sprinkling).

Instructions:

01 - In a medium bowl, combine diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, flour, and lemon juice. Stir until apples are well-coated. Set aside.
02 - Preheat oven to 375°F (190°C).
03 - Roll out the pie crusts on a lightly floured surface. Use a round cutter (about 3 inches in diameter) to cut out circles.
04 - Press each pie crust circle into the cups of a muffin tin, forming a small cup shape.
05 - Spoon the apple mixture into each crust, filling about 3/4 full.
06 - Top each mini pie with a drizzle of caramel sauce.
07 - Place a second pie crust circle on top, or cut out decorative shapes to place over the filling.
08 - Brush with beaten egg and sprinkle with granulated sugar.
09 - Bake for 20-25 minutes, or until the crust is golden brown and the filling is bubbly.
10 - Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
