Peanut Butter Buckeyes (Print Version)

Ingredients:

01 - ½ cup unsalted butter, softened.
02 - 1 cup creamy peanut butter.
03 - ¼ tsp vanilla extract.
04 - 3 cups powdered sugar.
05 - 3 cups semi-sweet chocolate chips.
06 - 4 tsp coconut oil (or vegetable shortening).

Instructions:

01 - In a large bowl, blend the softened butter, peanut butter, and vanilla extract. Gradually add the powdered sugar until the mixture forms a dense dough.
02 - Shape the dough into small balls and place them on a parchment-lined baking sheet. Insert a toothpick into each ball and freeze for 30 minutes.
03 - In a microwave-safe bowl, gently heat the chocolate chips and coconut oil (or shortening) in intervals, stirring until completely melted and smooth.
04 - Dip each peanut butter ball into the melted chocolate, leaving a small circle of peanut butter visible at the top. Allow the excess chocolate to drip off before placing the ball back on the sheet.
05 - Freeze the coated buckeyes for 15 minutes to set. Remove the toothpicks and smooth over the holes if desired. Enjoy!.
