Peanut Butter Buckeyes (Print Version)
Ingredients:

½ cup unsalted butter, softened.

1 cup creamy peanut butter.

¼ tsp vanilla extract.

3 cups powdered sugar.

3 cups semi-sweet chocolate chips.

4 tsp coconut oil (or vegetable shortening).
Instructions:

In a large bowl, blend the softened butter, peanut butter, and vanilla extract. Gradually add the powdered sugar until the mixture forms a dense dough.

Shape the dough into small balls and place them on a parchment-lined baking sheet. Insert a toothpick into each ball and freeze for 30 minutes.

In a microwave-safe bowl, gently heat the chocolate chips and coconut oil (or shortening) in intervals, stirring until completely melted and smooth.

Dip each peanut butter ball into the melted chocolate, leaving a small circle of peanut butter visible at the top. Allow the excess chocolate to drip off before placing the ball back on the sheet.

Freeze the coated buckeyes for 15 minutes to set. Remove the toothpicks and smooth over the holes if desired. Enjoy!.
