Stuffed Chocolate Chip Cookies (Print Version)

Ingredients:

01 - Salt: 1/2 teaspoon.
02 - Baking soda: 1 teaspoon.
03 - All-purpose flour: 2 1/2 cups.
04 - Unsalted butter, softened: 1 cup.
05 - Granulated sugar: 3/4 cup.
06 - Brown sugar, packed: 3/4 cup.
07 - Large eggs: 2.
08 - Vanilla extract: 2 teaspoons.
09 - Semisweet chocolate chips: 1 1/2 cups.
10 - Mini peanut butter cups: 12.

Instructions:

01 - Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
02 - In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
03 - In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, followed by the vanilla extract, and mix until smooth.
04 - Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the semisweet chocolate chips.
05 - Take about 2 tablespoons of cookie dough and form it into a circle. Place a mini peanut butter cup in the center, then cover with another tablespoon of dough, sealing the edges securely around the peanut butter cup.
06 - Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
07 - Bake for 10-12 minutes, or until the edges are golden brown. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
