Pineapple Sugar Cookies (Print Version)

Ingredients:

01 - 1/4 cup unsalted butter, melted.
02 - 1/3 cup brown sugar.
03 - 12 pineapple slices (from canned).
04 - 12 maraschino cherries.
05 - 1 cup granulated sugar.
06 - 1/2 cup unsalted butter, softened.
07 - 1 large egg.
08 - 1 tsp vanilla extract.
09 - 1 1/2 cups all-purpose flour.
10 - 1/4 tsp salt.
11 - 1/4 tsp baking soda.

Instructions:

01 - Preheat oven to 350°F. Mix melted butter and brown sugar together. Place a teaspoon of the mixture into each muffin tin compartment, then add a pineapple slice and a maraschino cherry on top.
02 - In a large bowl, cream together granulated sugar and softened butter until light and fluffy. Beat in the egg and vanilla extract.
03 - In a separate bowl, whisk together flour, salt, and baking soda. Gradually add the dry ingredients to the wet mixture until fully combined.
04 - Form dough balls and flatten slightly. Place each on top of the pineapple and cherry in the muffin tin compartments.
05 - Bake for 14-16 minutes, or until the cookies are golden brown.
06 - Let cookies cool in the muffin tin for 5 minutes, then gently remove.
