Pumpkin S'mores (Print Version)

Ingredients:

01 - 1 cup pumpkin puree.
02 - 1/2 cup sugar.
03 - 1/2 cup brown sugar, packed.
04 - 1/2 cup unsalted butter, softened.
05 - 1 large egg.
06 - 1 tsp vanilla extract.
07 - 2 cups all-purpose flour.
08 - 1 tsp baking soda.
09 - 1 tsp pumpkin pie spice.
10 - 1/4 tsp salt.
11 - 1 cup chocolate chips.
12 - 1 cup mini marshmallows.

Instructions:

01 - Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
02 - In a large bowl, beat together the pumpkin puree, sugar, brown sugar, and softened butter until creamy.
03 - Add the egg and vanilla extract, mixing well.
04 - In a separate bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
05 - Gradually add the dry mixture to the wet mixture, stirring until just combined.
06 - Fold in the chocolate chips.
07 - Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
08 - Gently press mini marshmallows into the top of each cookie dough ball.
09 - Bake for 10-12 minutes, or until the edges are lightly golden.
10 - Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
