Pumpkin S'mores (Print Version)
Ingredients:

1 cup pumpkin puree.

1/2 cup sugar.

1/2 cup brown sugar, packed.

1/2 cup unsalted butter, softened.

1 large egg.

1 tsp vanilla extract.

2 cups all-purpose flour.

1 tsp baking soda.

1 tsp pumpkin pie spice.

1/4 tsp salt.

1 cup chocolate chips.

1 cup mini marshmallows.
Instructions:

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, beat together the pumpkin puree, sugar, brown sugar, and softened butter until creamy.

Add the egg and vanilla extract, mixing well.

In a separate bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.

Gradually add the dry mixture to the wet mixture, stirring until just combined.

Fold in the chocolate chips.

Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Gently press mini marshmallows into the top of each cookie dough ball.

Bake for 10-12 minutes, or until the edges are lightly golden.

Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
