Pumpkin S'mores Cookies (Print Version)

Ingredients:

01 - 1 cup unsalted butter, softened.
02 - ¾ cup brown sugar, packed.
03 - ¼ cup granulated sugar.
04 - ½ cup pumpkin puree.
05 - 1 large egg.
06 - 1 tsp vanilla extract.
07 - 2 ¼ cups all-purpose flour.
08 - 1 tsp baking soda.
09 - 1 tsp pumpkin pie spice.
10 - ½ tsp salt.
11 - 1 cup chocolate chips.
12 - 1 cup mini marshmallows.
13 - 8 graham crackers, broken into small pieces.

Instructions:

01 - Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
02 - In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
03 - Beat in the pumpkin puree, egg, and vanilla extract until well combined.
04 - In a separate bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
05 - Gently fold in the chocolate chips, mini marshmallows, and graham cracker pieces into the cookie dough.
06 - Using a spoon or cookie scoop, drop dough balls onto the prepared baking sheet. Press extra marshmallows, chocolate chips, and graham cracker crumbs on top for garnish.
07 - Bake for 12-14 minutes or until the edges are golden brown. Let the cookies cool on the baking sheet before transferring them to a wire rack.
