Pumpkin Spinach And Feta Muffins (Print Version)

Ingredients:

01 - 1 cup pumpkin puree.
02 - 1 cup fresh spinach (chopped).
03 - ½ cup feta cheese (crumbled).
04 - 2 large eggs.
05 - 1 ½ cups all-purpose flour.
06 - 1 tsp baking powder.
07 - 1 tsp baking soda.
08 - ½ tsp salt.
09 - ½ tsp black pepper.
10 - ¼ cup olive oil.
11 - ½ cup milk.

Instructions:

01 - Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
02 - In a large bowl, combine pumpkin puree, chopped spinach, crumbled feta, eggs, olive oil, and milk. Mix until well combined.
03 - In another bowl, whisk together flour, baking powder, baking soda, salt, and black pepper.
04 - Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
05 - Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
06 - Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
