Pumpkin Streusel Bars (Print Version)

Ingredients:

01 - 1 cup pumpkin puree.
02 - 1 cup sugar.
03 - 1/2 cup vegetable oil.
04 - 2 large eggs.
05 - 1 tsp vanilla extract.
06 - 1 1/2 cups all-purpose flour.
07 - 1 tsp baking powder.
08 - 1 tsp baking soda.
09 - 1 tsp pumpkin pie spice.
10 - 1/2 tsp salt.
11 - 1/2 cup all-purpose flour (for streusel).
12 - 1/2 cup packed brown sugar (for streusel).
13 - 1/2 cup rolled oats (for streusel).
14 - 1/2 tsp cinnamon (for streusel).
15 - 1/4 cup cold butter, cubed (for streusel).

Instructions:

01 - Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan.
02 - In a large bowl, combine pumpkin puree, sugar, vegetable oil, eggs, and vanilla. Mix until smooth.
03 - In another bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt.
04 - Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
05 - In a separate bowl, mix flour, brown sugar, oats, and cinnamon for the streusel topping. Cut in the cold butter until crumbly.
06 - Pour the pumpkin batter into the prepared baking pan and spread evenly.
07 - Sprinkle the streusel topping over the batter.
08 - Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
09 - Allow to cool in the pan before cutting into squares.
