Pumpkin Tiramisu (Print Version)

Ingredients:

01 - 1 cup pumpkin puree.
02 - 1/2 cup brown sugar, packed.
03 - 1 teaspoon ground cinnamon.
04 - 1/2 teaspoon ground nutmeg.
05 - 1/2 teaspoon ground ginger.
06 - 8 oz mascarpone cheese, softened.
07 - 1 cup heavy whipping cream.
08 - 1 teaspoon vanilla extract.
09 - 1 cup brewed espresso or strong coffee, cooled.
10 - 2 tablespoons coffee liqueur (optional).
11 - 24-30 ladyfinger cookies.
12 - Cocoa powder (for dusting).

Instructions:

01 - In a bowl, mix pumpkin puree, brown sugar, cinnamon, nutmeg, and ginger until well combined.
02 - In another bowl, beat mascarpone cheese, heavy cream, and vanilla extract until smooth and fluffy.
03 - Gently fold the pumpkin mixture into the mascarpone mixture.
04 - In a shallow dish, combine cooled espresso and coffee liqueur (if using).
05 - Dip each ladyfinger quickly into the coffee mixture and arrange in a single layer in a serving dish.
06 - Spread half of the pumpkin-mascarpone mixture over the ladyfingers.
07 - Add another layer of dipped ladyfingers and top with the remaining pumpkin mixture.
08 - Cover and refrigerate for at least 4 hours or overnight.
09 - Before serving, dust with cocoa powder for a finishing touch.

Notes:

01 - For a stronger coffee flavor, let the ladyfingers soak a bit longer in the espresso mixture.
02 - This tiramisu tastes even better the next day as the flavors meld together!.
