Pumpkin Turkey Meatballs (Print Version)

Ingredients:

01 - 1 lb ground turkey.
02 - 1/2 cup canned pumpkin puree.
03 - 1/2 cup almond flour.
04 - 1/4 cup grated Parmesan cheese (optional).
05 - 1 egg.
06 - 2 cloves garlic, minced.
07 - 1 teaspoon onion powder.
08 - 1 teaspoon dried oregano.
09 - 1 teaspoon salt.
10 - 1/2 teaspoon black pepper.
11 - 1/2 teaspoon paprika.

Instructions:

01 - Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
02 - In a large bowl, combine ground turkey, pumpkin puree, almond flour, and Parmesan cheese (if using).
03 - Add the egg, minced garlic, onion powder, oregano, salt, pepper, and paprika. Mix until fully combined.
04 - Scoop out about 1.5 tablespoons of the mixture and roll into balls.
05 - Place the meatballs on the prepared baking sheet, spacing them evenly.
06 - Bake in the preheated oven for 20-25 minutes, or until cooked through and golden brown.
07 - Let the meatballs cool slightly before serving. Enjoy with your favorite dipping sauce or over a salad!.
