Red Velvet Whoopies (Print Version)

Ingredients:

01 - 2 cups all-purpose flour.
02 - 2 tbsp cocoa powder.
03 - 1/2 tsp baking soda.
04 - 1/4 tsp salt.
05 - 1/2 cup unsalted butter, softened.
06 - 1 cup granulated sugar.
07 - 1 large egg.
08 - 1 tsp vanilla extract.
09 - 1/2 cup buttermilk.
10 - 1 tbsp red food coloring.
11 - 1/2 cup unsalted butter, softened (for filling).
12 - 8 oz cream cheese, softened.
13 - 3 cups powdered sugar.
14 - 1 tsp vanilla extract (for filling).

Instructions:

01 - Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
02 - In a mixing bowl, sift together the flour, cocoa powder, baking soda, and salt.
03 - In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing well.
04 - Gradually fold in the dry ingredients, alternating with the buttermilk. Stir in the red food coloring to achieve a smooth, vibrant batter.
05 - Drop spoonfuls of the batter onto the lined baking sheets, leaving space between each. Bake for 10-12 minutes, or until set.
06 - For the filling, beat the softened butter, cream cheese, powdered sugar, and vanilla extract together until smooth and creamy.
07 - Once the cookies have cooled, spread or pipe the cream cheese filling onto the flat side of one cookie, then sandwich it with another.
