Lime Mousse Cheesecake (Print Version)

Ingredients:

01 - 1 ½ cups graham cracker crumbs.
02 - ¼ cup granulated sugar.
03 - 6 tbsp melted butter.
04 - 16 oz cream cheese (softened).
05 - ¾ cup granulated sugar (for cheesecake filling).
06 - 1 tsp vanilla extract.
07 - Zest of 2 limes.
08 - Juice of 3 limes (about ⅓ cup).
09 - 1 cup heavy whipping cream (for cheesecake filling).
10 - 1 cup heavy whipping cream (for mousse topping).
11 - ¼ cup powdered sugar.
12 - Zest of 1 lime (for mousse topping).
13 - 1 tbsp lime juice (for mousse topping).

Instructions:

01 - Preheat oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs, sugar, and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until golden brown and let cool completely.
02 - In a large bowl, beat softened cream cheese and sugar until smooth and creamy. Add vanilla extract, lime zest, and lime juice, mixing until combined. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cheesecake mixture. Pour the filling over the cooled crust and refrigerate for at least 4 hours or overnight until set.
03 - For the mousse topping, whip the heavy cream and powdered sugar until soft peaks form. Add lime zest and juice, continuing to whip until stiff peaks form. Gently spread or pipe the lime mousse over the cheesecake.
04 - Garnish with extra lime zest or thin lime slices. Slice and enjoy!.

01 - Chilling the cheesecake overnight helps the flavors fully develop and ensures a firm texture.
02 - Lime zest can be used as a garnish for a vibrant and refreshing presentation.
