Rocky Road Cookies (Print Version)

Ingredients:

01 - 1 cup unsalted butter, softened.
02 - 1 cup brown sugar.
03 - ½ cup granulated sugar.
04 - 2 large eggs.
05 - 1 teaspoon vanilla extract.
06 - 2 ¼ cups all-purpose flour.
07 - ½ cup cocoa powder.
08 - 1 teaspoon baking soda.
09 - ½ teaspoon salt.
10 - 1 ½ cups semi-sweet chocolate chips.
11 - ¾ cup chopped walnuts or almonds.
12 - ¾ cup mini marshmallows (for mixing).
13 - 12 large marshmallows, cut in half (or use marshmallow fluff).

Instructions:

01 - Set the oven to 350°F (175°C) and prepare a baking sheet using parchment paper.
02 - In a bowl, blend together soft butter with brown and white sugar until creamy.
03 - Incorporate eggs individually, mixing thoroughly after each, then add vanilla.
04 - Mix flour, cocoa, baking soda, and salt in a separate bowl.
05 - Slowly merge the dry and wet mixtures, stirring until just blended.
06 - Mix in chocolate chips, nuts, and mini marshmallows.
07 - Take roughly 2 tablespoons of dough, flatten to form a disc.
08 - Position half a large marshmallow at the center.
09 - Flatten another dough bit, lay it atop, and seal edges enclosing the marshmallow.
10 - Continue the process for all cookies.
11 - Set shaped cookie dough spheres on baking sheet, spacing them apart.
12 - Cook for 10-12 minutes until rims are defined but middles are soft.
13 - Allow cookies to chill on sheet before moving to a wire rack.
