Ginger Sesame Noodles (Print Version)

Ingredients:

01 - 8 oz. noodles (spaghetti or your choice).
02 - 2 tbsp sesame oil.
03 - 1 cup mushrooms, sliced.
04 - 2 tbsp soy sauce.
05 - 1 tbsp ginger, grated.
06 - 2 cloves garlic, minced.
07 - 1 tbsp rice vinegar.
08 - 2 tbsp honey or maple syrup.
09 - 2 green onions, chopped.
10 - 1 tbsp sesame seeds (for garnish).

Instructions:

01 - Bring a large pot of salted water to a boil. Add noodles and cook until just tender, following package guidance. Drain and set aside.
02 - In a large skillet, heat 1 tablespoon of sesame oil over medium-high heat. Add mushrooms and cook until caramelized, about 5-7 minutes. Remove and set aside.
03 - Using the same skillet, heat the remaining sesame oil. Add garlic and ginger, cooking until aromatic, about 1-2 minutes.
04 - Stir in soy sauce, rice vinegar, and honey/maple syrup. Let simmer for another minute.
05 - Add the cooked noodles to the skillet and toss to coat them in the sauce.
06 - Serve the noodles topped with caramelized mushrooms, garnished with green onions and sesame seeds.
