Fried Noodles (Print Version)
Ingredients:

8 oz Shanghai-style noodles (or any fresh egg noodles).

2 tbsp vegetable oil.

1 cup sliced bell peppers (any color).

1 cup sliced mushrooms.

1 cup shredded carrots.

1 cup bean sprouts.

3 cloves garlic, minced.

1 tbsp soy sauce.

1 tbsp dark soy sauce.

1 tbsp oyster sauce.

1 tsp sesame oil.

1/2 tsp sugar.

2 green onions, chopped.
Instructions:

Cook the Shanghai noodles according to package instructions. Drain and set aside.

Heat vegetable oil in a large skillet or wok over medium-high heat.

Add minced garlic and sauté for about 30 seconds until fragrant.

Add bell peppers, mushrooms, and carrots. Stir-fry for 3-4 minutes until vegetables are tender-crisp.

Add the cooked noodles to the skillet with the vegetables.

In a small bowl, mix soy sauce, dark soy sauce, oyster sauce, sesame oil, and sugar. Pour this sauce over the noodles and vegetables.

Stir well to coat everything evenly and cook for an additional 2-3 minutes until heated through.

Add bean sprouts and green onions to the skillet. Stir-fry for another minute until bean sprouts are slightly wilted.
