Soft & Citrusy Orange Cookies (Print Version)

Ingredients:

01 - 1 large egg.
02 - 1 cup confectioners' sugar.
03 - 1-2 tbsp fresh orange juice.
04 - 1 tbsp orange zest (about 2 oranges).
05 - 1 tbsp unsalted butter, melted.
06 - ½ cup fresh orange juice.
07 - ½ cup unsalted butter, softened.
08 - ¾ cup granulated sugar.
09 - ½ tsp salt.
10 - 1¼ tsp baking powder.
11 - 2 cups + 2 tbsp all-purpose flour.
12 - Zest of ½ orange.

Instructions:

01 - Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
02 - In a bowl, whisk together the flour, baking powder, and salt. Set aside.
03 - In a separate bowl, cream the granulated sugar, softened butter, and orange zest until light and fluffy.
04 - Beat in the egg until the mixture is smooth.
05 - Gradually mix in the flour mixture and ½ cup orange juice, stirring just until combined.
06 - Scoop dough portions onto the prepared baking sheets and bake for 10 minutes. Let cool on the sheets.
07 - To make the glaze, whisk together the confectioners' sugar, orange zest, orange juice, and melted butter.
08 - Spread the glaze over the cooled cookies and let them set before serving.
